From dough to loaf

The basket does the shaping.

  1. 01 / 04

    Shape

Dust the basket and its cloth with flour, then lay the shaped dough in, seam side up. The oval is 25 × 15 × 8 cm.

  2. 02 / 04

    Proof

Cover and leave it to rise slowly — on the counter, or overnight in the fridge. The rattan breathes, so the crust forms a thin skin.

  3. 03 / 04

    Turn out

Tip the dough onto a peel or tray. The coils leave their rings of flour on top.

  4. 04 / 04

    Bake

Score and bake. The rings stay on the crust — the basket’s signature on every loaf.

Why a proofing basket

The basket holds the shape while the dough rises.

A soft sourdough spreads on its last rise. A basket keeps it tall, so it bakes into a loaf with height.

Oval proofing basket with linen liner and dough
  1. Step 1Flour the basketDust the liner, or the bare rattan, with flour so the dough does not stick.
  2. Step 2The last riseSeam side up, the dough proofs in the basket and keeps its oval shape.
  3. Step 3Turn it outTip it onto a board or into the pot: it lands seam side down, ready to score.
  4. Step 4BakeProofed without the liner, the rattan coils leave rings of flour on the crust.

Brush the basket out and let it dry after use.
